Your culinary adventure begins with a warm welcome in a typical Piedmontese farmhouse, surrounded by the green countryside of Alessandria.
Here, our local chef will welcome you and tell you the story of tajarin, the thin egg tagliatelle that represent the essence of Piedmontese cuisine. You will discover how this recipe is handed down from generation to generation, guarding family secrets and traditions.
You will learn how to mix the ingredients, roll out the dough with a rolling pin and make Tajarin, tagliatelle or pappardelle.
The Comodino sauce, a traditional Piedmontese sauce, involves the use of offal from farmyard animals, but can be replaced with a braised meat or other sauce. The Comodino sauce, from the Piedmontese dialect “cumuda'”, is so called because it “lies” on top of the pasta once cooked. It was the favorite sauce of King Vittorio Emanuele II. We will complete the meal with a second course or an appetizer of the Piedmontese tradition and we will accompany the coffee with the traditional dry pastries.
